Recipe: Spinach Artichoke Dip

1 tsp coconut oil

1 onion, finely chopped

The juice of 1 lemon

1/4 teaspoon sea salt

Instructions:

1. Preheat oven to 350 degrees. In a pan with hot coconut oil over medium heat. Add the onions and sweat until they become soft, about 8 minutes. Remove from the pan.

2. Add the artichokes and garlic in a pan, fry 2 to 3 minutes. Add spinach. Stir the mayonnaise, the fat in coconut milk, lemon juice, salt and pepper. Bring to a boil and add the onions.

3. Dissolve arrowroot powder with 1 tablespoon of water. Stir the mixture of artichoke. Transfer to oven dish and cook for 15 minutes. Serve with chips, pita bread.
